August BakeIt! Club – Toffee Pecan Ring

As lovely as it is, making gorgeous cakes for other people’s celebrations, sometimes it’s nice just to bake for the sheer enjoyment of it (and also to stop Mr Ice Maiden from complaining about never getting any cake!). However, being forever the multi-tasker, I thought I would combine a bit of fun baking with a bit of blogging and take part in Cooking, Cakes & Children‘s Bake It! Club.

The recipe for August was a rather scrummy Toffee Pecan Ring , just click on the link to visit Amy’s blog for the recipe and details of how to join in with Bake It! Club. I also decided to make a cinnamon version of the recipe. For this one I just left out the chocolate and toffees and added two tablespoons of cinnamon and 75g of chopped almonds, topping with a sprinkling of cinnamon before it went into the oven and finishing with glace icing instead of melted chocolate.

Fresh from the oven and smelling scrummy, there’s supposed to be a hole in the middle of the ring but I used the wrong size pans!

Bake It Club 5 - Put the Kettle On!

Finished with glace icing (just mix icing sugar and a little water or lemon juice to acheive a drizzleable consistency), and yes those are both mine :D

I’m pleased to say that Mr IM and Little Mister IM both preferred the toffee version so I got to eat most of the cinnamon one! This recipe is definately best eaten on the day you bake it but you can warm it through in the microwave for a minute to perk it up if you have any left over the next day – unlikely I know!
