  • 150 g unsalted butter, softened
  • 175 g caster sugar
  • 3 large eggs
  • 1/2 tablespoon vanilla bean paste
  • 160 g plain flour
  • 80 g unsalted pistachios
  • 2 ½ tablespoon baking powder
  • 1/4 tablespoon salt
  • 125 g ricotta

For the Frosting:

  • 60 g unsalted butter, softened
  • 60 g icing sugar
  • 70 g pistachio paste
  • 150 g cream cheese, room temperature

    Set the oven temperature to 180°C or 160°C (fan). Line and grease an 8-inch (20 cm) cake pan. Using your fingertips, press the orange zest into the sugar in a large basin until it becomes fragrant and sandy.
