Instructions
Step 1: Prepare the StrawberriesWash and dry the strawberries. Chop them into small pieces and set aside. For extra flavor, you can mash some of the strawberries lightly.
Step 2: Mix the dry ingredientsIn a medium bowl, mix the all-purpose flour, baking powder, baking soda, and salt together. In a large mixing bowl, beat the unsalted butter, granulated sugar, and brown sugar with a mixer. Continue until the mixture is light and fluffy, about 3-4 minutes.
Step 3: Add the wet ingredientsBeat in the eggs one at a time. Then mix in the vanilla extract and strawberry jam. You can add red food coloring, add a few drops at this stage to achieve the desired color
Step 4: Mix the wet and dry ingredientsAdding the dry mixture to the wet ingredients slowly. Overmix can make the cookies tough. If you are using chopped strawberries and white chocolate chips, add them at this stage. Finally, cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
Step 5: Scoop and BakePreheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Use a cookie scoop to drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the center is set.Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to finish cooling completely.
Step 6: Funsnax Strawberry FrostedUse a blender or food processor to grind the freeze-dried strawberries into a fine powder. Set it aside. Beat the butter on medium speed until creamy, about 2 minutes.Adding the powdered sugar, vanilla, milk or cream, and salt with the mixer on low. Then, add the strawberry powder. Increase the mixer speed to medium and beat until completely smooth, about 3 minutes.
Step 7: Frosting the CookiesUsing a small offset spatula to spread the strawberry buttercream onto each one when the cookies have cooled completely . For extra flavor and presentation, top the frosted cookies with a little more strawberry powder and fresh strawberry slices.
