  • 1 cup blueberries
  • ½ teaspoon cornstarch
  • 1/2 teaspoon  vanilla extract
  • 2 packets Truvia sugar substitute
  • 1/3 cup quick-cooking oats
  • 1 teaspoon unsweetened maple syrup
  • 1 part vanilla protein powder from Clean Simple Eats
  • 1/2 teaspoon ground cinnamon

Instructions
 

  • Step 1: Prepare the Blueberries
    First, take a small bowl and add the blueberries, vanilla extract, and cornstarch. Then, put the bowl in the microwave and heat for 1 minute. This will soften the blueberries and give the mixture a richer flavor.
  • Step 2: Mix the Topping
    While you wait for the blueberries to cook, prepare another bowl and add the oats, unsweetened maple syrup, protein powder, cinnamon, and a pinch of salt. This mixture will make the crunchy topping for the crumble, giving it a sweet and nutritious flavor.
  • Step 3: Adjust the Moisture of the Topping
    Next, slowly add water to the topping mixture, about 1/2 tablespoon at a time. Stir well until the mixture becomes crumbly in texture, not too dry and not too wet. If you add too much water at once, the topping will become soggy and lose its crunch, so be careful when adding water.
  • Step 4: Cover and Cook
    After the blueberries are cooked, remove them from the microwave. Sprinkle the prepared topping evenly over the surface of the blueberries. Then, put the bowl back in the microwave and cook for another minute. If after 1 minute you find the crumble is not crispy enough, continue to cook for another 10 seconds each time until you achieve the desired crispiness.
  • Step 5: Decorate and Enjoy
    Finally, when the crumble is fully cooked, you can add a little whipped cream on top to increase the richness and appeal. Sprinkle a little cinnamon powder on top to enhance the flavor. The cake will be more delicious when enjoyed warm.
