My Banana streusel bread recipe is the perfect breakfast staple that I love. Banana bread is delicious on its own, but combining it with the streusel filling makes every slice delicious, with a wonderful textural contrast between the moist bread and the crunchy, rich filling. Crispy on the outside and soft on the inside, this moist banana bread with streusel topping will blow your taste buds away.

Ingredients
  

  • 4 Overripe bananas
  • 1/3 cup Kerrygold salted butter melted
  • 1 cup Sugar
  • 1 Egg
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking soda
  • A little  salt
  • 1/2  cup flour
  • 1/3 cup Brown sugar
  • 2 teaspoon flour
  • 1/4 teaspoon Cinnamon

Instructions
 

  • Step 1: Prepare the Wet Ingredients
    Preheat the oven to 350°F. Lightly coat a 9x5-inch loaf pan with oil. Whisk together mashed bananas, oil, 1/3 cup brown sugar, eggs, and vanilla in a medium bowl until smooth.
  • Step 2: Prepare the Flour Mixture
    Next, in a large bowl, thoroughly mix 1 cup of whole wheat flour, all-purpose flour, baking soda, salt, and baking powder until well combined. Create a well in the center of the flour mixture and add the banana mixture; stir just until incorporated. Pour half of the batter (about 2 cups) into the prepared loaf pan, spreading it evenly to form a layer.
  • Step 3: Add the Streusel Layer for Banana Streusel Bread
    In a medium bowl, mix together the walnuts, melted butter, cinnamon, the remaining 2 1/2 tablespoons of brown sugar, and 2 tablespoons of whole wheat flour until well combined. Evenly sprinkle this mixture over the batter in the pan. Then, pour the remaining batter (about 2 cups) over the streusel mixture, spreading it evenly to cover the streusel layer.
  • Step 4: Bake the banana streusel bread
    Bake the loaf until a wooden skewer inserted into the center comes out with a few moist crumbs, about 1 hour. (If needed, you can cover the loaf with aluminum foil halfway through baking to prevent it from over-browning.)
  • Step 5: Cool and Serve
    Let the cake cool in the pan on a wire rack for about 15 minutes. Then, carefully remove the cake from the pan and let it cool on a wire rack for about 45 minutes. Slice the cake and serve warm or at room temperature.
