Ingredients
  

  • 1/2 cup butter
  • 3/4 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tbsp  vanilla extract
  • 1/2 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1/2 tbsp salt
  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups old-fashioned oats
  • 1/2 cup  toffee bits
  • 14 caramels
  • Flaked salt, for topping

Instructions
 

  • Step 1: Mix Wet Ingredients
    In a stand mixer, cream the butter and sugars on medium-high speed until light and fluffy, about 3-4 minutes. Add the egg and vanilla, then mix until smooth.

  • Step 2: Add Dry Ingredients
    Slowly mix in salt, baking powder, baking soda, and flour until just combined. Add the oats and mix on low until incorporated, then fold in the toffee bits.

  • Step 3: Prepare Cookie Dough
    Scoop the dough into balls using a 3-tablespoon scoop. Put a caramel in the center of each dough ball. Chill the dough for 2-24 hours.

  • Step 4: Preheat Oven and Arrange Cookies
    Preheat the oven to 365°F. Line two baking sheets with parchment paper, then place 6-8 cookies on each sheet. Sprinkle with flaked salt.

    Bake the cookies for 10-12 minutes until the edges turn golden brown. Top with extra salt flakes if desired.
